For this weeks ‘Meal of the Week’, we are going to be making easy and healthy egg breakfast muffins. Eggs are always a great option for breakfast because they are packed with nutrients and protein. The best thing about this recipe is that you can customize them any way you like! I usually just put sausage and Jalapenos in mine, but you can add more veggies, meat, or toppings.
These muffins are a perfect idea for people who are usually on the go in the morning. To make these, it will take you around 20 minutes, so block off sometime on your calendar to make your mornings easier!
What you will need:
- Muffin Pan
- Olive oil or PAM
- 12 Eggs
- Ground Sausage
- Cheese (optional)
- Jalapenos (optional)
- Green onion (optional)
Instructions
First cook about 2oz of the ground sausage. While the sausage is cooking, whisk together 12 eggs in a big bowl. Grease down the muffin pan.
Fill up each of the muffin slots about 3/4 of the way. If you have any leftover egg in the bowl, that’s my bad LOL. Top add in a little bit of sausage, jalapeno, green onion and cheese.
Put in the oven at 350 degrees and let it cook for 10 – 12 minutes or until it looks like they are popping out of the pan. The perfect muffin looks like the picture above!
And tada! 12 egg muffins ready to go for your morning. I usually eat 2 a day and then on days I get a good lift in, I’ll have 3.
