For this weeks ‘Meal of the Week’, we are going to be making Loaded Sweet Potato Beef Tacos. This might sound like a pretty strange concept right? Who would have thought to create a taco using a sweet potato?
I love tacos but I also love finding new ways to make them, while also keeping them healthy. The key to making a taco healthy, is making sure you incorporate complex carbs instead of starchy carbs.
Complex carbs are carbs found in whole, unprocessed foods, including fruits, vegetables, legumes and whole grain. Benefits include providing energy, managing weight, promoting muscle growth and more!
One of my favorite complex carbs is sweet potato. By itself, a sweet potato does not have much flavor to it. But if you cook and prepare it right, not only is it good for you, it tastes good too!
Then I figured, why not combine both of these together! This recipe is packed with protein, carbs, fat, and also essential vitamin and minerals. And best of all, it is delicious and takes only about 25 minutes to make!
Ingredients
4 sweet potatoes
1 pack of taco seasoning
Tablespoon of cheddar cheese
1 chopped Green onion
1 tablespoon of Lite sour cream
Instructions
1. Oil a skillet with olive oil. Add in beef with taco seasoning and cook for about 15 – 20 minutes. For the last minute or 2, I like to turn the heat on high to give it a little bit of a sear.
2. While you are cooking the beef, you can also cook your sweet potatoes in the microwave. Start my poking holes in the sweet potatoes with a fork. Cook in the microwave for about 8 – 10 minutes, flipping them half way through. If still hard in the middle, cook for an additional 1 – 3 minutes.
3. Cut open sweet potatoes and place about 1/2 cup of beef in each. Add on the cheese, onion, and sour cream (Garnish to your liking). Add any additional toppings you may like!
