Mexican Chicken Bowls

If you are anything like me, you are always looking for the cheapest option. I don’t care for brand names or anything like that. I like good quality products at a fair price. I also have this same mind set when it comes to eating. I believe one of the easiest ways for you to save money is on food. For example, if you go out on a date with your significant other, I bet you will probably spend about $40 – $50 depending on how many drinks you get. Now if you go out to eat 2-3 times a week, you are already looking at almost $150 on food! It adds up quick. 

If you are looking for an easy way to save some money then I would suggest meal prepping. I have been doing this for awhile because does it not only save you money, it also saves you time. I will show you how to meal prep all of your lunches for around $10 a week!

One of the easiest and cheapest things to meal prep is chicken! This week I bought a little over 3 pounds of chicken for about $6. I will be able to use this all week for lunches and probably have it for dinner a night or 2. I also bought a pound of rice for $1.59 and then a pack of raw black beans for $1.79. The reason I like to go with raw black beans is because you cut out all of the sodium and other preservatives. I also bought some lite sour cream for $.99, a bunch of kale for $1.29, buffalo sauce for $1.29, and taco seasoning for $.50. 

Obviously you can add other things like cheese, avocado, fresh herbs, and any other veggies. But for this post, I am going to keep it basic but also tasty. Here is the list of ingredients and their price:

Ingredients

  • 3 pounds of chicken – $6
  • 1 pound of rice – $1.59*
  • 1 pound of black beans – $1.79*
  • Lite Sour Cream – $.99
  • Bunch of Kale – $1.29
  • Buffalo Sauce – $1.29*
  • Taco Seasoning – $.50
Total Cost: $13.45
*These items will usually last you 2 weeks 
 

The Chicken:

 The way I make the chicken is super easy. Throw in it in a crockpot with a little olive oil and then the whole taco seasoning pack. Cook this on high for about 4 hours. Once it starts to fall part, shred it all up and let it sit in the their on low for about another 20 minutes. This will allow the chicken to get some more flavor.
 

The Rice:

I don’t make the whole pound of rice each week. What I usually do is make about 2 cups per week. To make it easier, I put it in my instapot with 4 cups of water and then use the rice setting (make sure to cook on low). This cooks for about 15 minutes and then I let it depressurized naturally rather than using the quick release. 
 

The Beans:

This week is my first time trying them in the Instapot, but I usually put them in my mini crockpot with and make sure they are submerged in about 1.5 – 2 inches of water. I add in some salt and black pepper for flavoring. In the crockpot they take about 3.5-4 hours on high and in the instapot they will take about 30 minutes to cook. Let it depressurized naturally. 
 

The Buffalo Sauce: 

My favorite dressing for my bowls is my buffalo sauce creation. It is really simple. All you do is mix the lite sour cream (or greek yogurt depending on your weekly budget) and buffalo sauce. I would recommend adding a little bit of buffalo sauce at a time until you get it to a well balance sauce. 
 

The Assembly: 

My typical bowl usually has about 6 – 8 ounces of chicken, 1/2 cup of brown rice, 1/4 of black beans, one or 2 stalks of kale (rip off the kale from the stem), and a dab of the buffalo sauce mixture. Here is a breakdown of the nutritional value: 
 
  • Carbs – 58 g
  • fat – 8 g
  • Protein – 48 g 
  • Calories – 496
